Trapizzino

testaccio
Tier: budget

The birthplace of the trapizzino — a triangular pocket of pizza bianca stuffed with braised classics like pollo alla cacciatora or coda alla vaccinara. Invented here by Stefano Callegari; still the best version in Rome.

The trapizzino was invented at this exact location by Stefano Callegari, which makes it one of the few places in Rome where a dish and its birthplace share the same address. It's built for eating standing up or on the move rather than as a sit-down meal — the format is fundamentally street food, and the fillings rotate based on what's been braised that day.
