No reservations means the only real strategy is timing: the kitchen opens for lunch at 12:45 and dinner at 19:45, and arriving right at either time is the difference between a short wait and an hour queuing down the street once word gets around. The dining room seats only a few dozen, which is exactly what keeps the kitchen consistent — there's no version of this place that scales up without losing what makes it good.
